Ninja wanted to expand on the ‘Recipes’ section of their website, so our copywriters took on the project. We tested several blenders in the range, and devised a range of recipes through a process of trial and error.
Our brief was to create relatively simple recipes and make them easy to follow. We will also be involved in the rebranding of the Ninja website in the coming months.

Courgette Quinoa Latkes
What you’ll need…
450 grams of courgette, roughly chopped
2 large eggs
½ teaspoon of salt
½ teaspoon of ground black pepper
30 grams of matzo meal
90 grams of quinoa, cooked
3 tablespoons of olive oil
120 grams of sour cream
2 tablespoons of chives
These stunning quinoa pancakes are a great alternative to the classic flour-based recipe everybody knows. Give your breakfasts a different dimension with Courgette Quinoa Latkes.
Place the eggs, courgette, salt and pepper into the 1.2L Processing Bowl of your Ninja Compact Kitchen System with Nutri Ninja, and select Auto-iQ CHOP. Empty the mixture into a mixing bowl, add the matzo meal and quinoa, and stir to combine.
Heat the olive oil in a frying pan over a medium heat. Drop a tablespoon of the mixture into the pan, and press it lightly until it’s evenly flattened. Cook for two minutes on each side – until it’s golden brown. Repeat with the rest of the mixture. You should get four latkes from this recipe.
Serve your Courgette Quinoa Latkes with sour cream and some chopped chives.
